If you have followed our cooking journey for any length of time, you might already be aware of the fact that we have a real passion for mangoes, or to be completely honest, a proper addiction. In countries like the UK – where we currently live – the mangoes you can find at the supermarket are a constant hit and miss, and the only kind of consistency there is about them, is the price, which generally has no mercy on your pockets. Whenever we can find a good mango deal, we do our best to stock up, but the problem is: how can you tell if they will be good before they ripen? Most of the time you can’t, but what you can do, is to peel one of them when it’s still hard like a stone, and make this delicious salad, which will give you a pretty good understanding of how that specific variety of mango will be in a couple of weeks’ time when it’s ripe and ready. Good unripe mangoes already have plenty of sweetness, but they also have a consistency that ranges between crunchy and slightly chalky, which is what makes this refreshing dish truly special.
- To begin with, mix the sugar, the lime juice, the soy sauce and the chillies to obtain the condiment for the salad.
- Now, julienne the mango as you prefer; we like to thinly slice it using a mandolin, and then julienne the slices using a knife, but any other method will do.
- Combine the julienned mango, the peanuts, and the coriander with the sauce, and stir the ingredients together to complete the dish.
- Let the salad rest for 20 minutes, adjust the salt if necessary, serve, and most importantly… enjoy!
