17ozfennel
1 mediumorange
2 tbspraisins
1 smallfresh chili
1 tbsplemon juice
salt (to taste)
dill (to taste)
Instructions
- Place the raisins into a small bowl and cover them with water to rehydrate them. Clean the fennel and shave it as finely as possible. Chop the chili and the dill.
- To segment the orange, slice off the top and the bottom. Then, using even downward strokes, slice the skin off the fruit and discard it. Slip the knife between a segment and a connective membrane of the orange, cutting until you reach the centre to separate the segment from the fruit.
- To compose the final salad, drain the raisins, take a bowl, tip in all the ingredients, add some salt and pepper if desired, and give the ingredients a good mix to complete the dish. Both the vegetables and the fruit will release some of their juices, so before serving the salad make sure to mix well the ingredient once again.
