Vegan mayonnaise (oil-free)

One of the things we missed the most, as newbie vegans, was the possibility of being heavy-handed with mayo at any possible time. However, after a bit of research and a few failed attempts, we managed to create a stunning low-fat mayo that really tastes incredible. We are currently in the process of developing another mayo recipe, which we will strive to publish as soon as possible. But in the meantime, I hope you will enjoy our version of this sauce, and please let us know, in the comments down below, what you think about it.

Ingredients[ ounces / grams ]
5gcider vinegar
5glemon juice
12gmustard
2ggranulated sugar
salt
1 pinchturmeric
1 pinchcurry powder (optional)
140gsilken tofu
1 tspcider vinegar
1 tsplemon juice
2½ tspmustard
¼ tspgranulated sugar
salt
1 pinchturmeric
1 pinchcurry powder (optional)
5ozsilken tofu
Instructions
  1. Tip all the ingredients into a container fit for a hand blender and blitz them until they combine into a smooth sauce.
Yield, Times and Info
Makes: 3-4 portions (4.5oz - 155g)
Preparation Time: 10m
Storage Times: Keep for 3 days in the fridge.
